Guar Gum will disperse and swell almost completely in cold or hot water to form a highly viscous sol. Guar Gum sols have a buffering action and are very stable from pH 4 to 10.5. Guar Gum is a nonionic polymer compatible with most other plant hydrocolloids as well as carbohydrates and proteins.

Guar Gum is primarily used to thicken aqueous solutions, and control the mobility of dispersed or solubilized materials. The water-binding characteristics of Guar Gum makes it ideal as a rapid hydration agent in the formation of viscous colloidal sols. It is versatile as a thickener, viscosity modifier, stabilizer, and binder.
