  • White bread, French bread - 3 - 5 g per liter bulk liquid
  • Weggli, croissants, braids - 5 - 10 g per liter bulk liquid
  • Puff pastry, cake dough - 10 - 15 g per liter bulk liquid
  • Sweet dough, yeast and Viennese pastries - 15 – 25 g per liter bulk liquid
  • The effectiveness is increased if DiaMalt is dissolved dry in lukewarm milk and then added to the dough.
  • Addition of yeast:  The amount of yeast depends on the leavening process, the size of the dough and the temperature of the bulk liquid.
