From the organic agave cultivated in Mexico, the juice from the piña is extracted, filtered, heated and concentrated to syrup with light consistency, which is then dehydrated to powder. Agave syrup has a very low glycemic index compared to other natural sweeteners. The glycemic index of 21 means that the effect on blood sugar after ingestion is minimal compared to glucose, whose glycemic index is 100.
