Trisodium Phosphate is colorless or white crystal, powder or crystalline granule. It’s easily soluble in water but insoluble in organic solvent.The Dodecahydrate lose all crystal water and become Anhydrous when temperature rise to 212 ℃. Solution is alkaline，slightly corrosion on skin. In food processing industry, it is used as buffering agent, emulsifier, anti-caking agent, antioxidant additive, nutrition supplement and metal chelating agent.

Monosodium Phosphate is colorless column crystal, odorless, slightly deliquescence. The relative density is 2.04 and melting point is 60℃. It is easily soluble in water but insoluble in ethanol. If heated below 100℃, it can dissolve in its’ own crystal water and convert to monohydrate salt. When heated up to 100℃, it’ll lose crystal water and change to anhydrous substances, which will become Sodium Metaphosphate if it continues to be heated. In food industry, it is used as buffering, character improving agent, emulsifier, nutrition supplement, antioxidant additive, brine penetrable agent, sugar clarifier, stabilizer, coagulant and fowl scalding agent.

Monosodium Phosphate is white or colorless rhombic crystalline or prismatic crystal. It’s easily soluble in water, but insoluble in ethanol. The relative density is 1.52 and melting point is 34.6℃. If heated to 180℃, it will lose crystal water and convert to anhydrous In food industry, it is used as agent for baking to avoid oxidation stain and as emulsifier in dairy product to prevent egg white from solidification. It is also used as emulsifier and chelating agent for solid drinks

Dipotassium Phosphate is white crystal or granule, odorless, hygroscopic. Relative density is 2.564 In food industry, it is used as buffering agent, chelating agent, yeast food, emulsifying salt, and synergistic agent of anti-oxidation.

Sodium Pyrophosphateis colorless or white crystal or white crystalline powder. Anhydrous is white powder. It’s soluble in water, insoluble in ethanol or any other organic solvents. Aqueous solution is alkaline. Its’ chelating capacity of metal ions such as Cu2+, Fe3+, Mn2+ is very active. It is used as quality improver,PH regulator, chelating agent, emulsifier and binder in food industry. It reacts with Fe2+ and Mg2+ to form chelates. In food industry, it is used as buffering agent, swelling agent, chelating agent, stabilizer, emulsifier and color improver

Sodium Hexametaphosphate is colorless transparent flake like foliated glass or float sand crystalline powder. It’s easily soluble in water, insoluble in organic solvent such as ethanol and ether. It absorbs moisture easily. When put in air, it could slowly absorb moisture and turn into viscose-like substance. Aqueous solution could react with metal ions such as Calcium, Magnesium, to form complex compound. Melting point is 616℃ (decompose). Relative density is 2.484g/cm3 (20℃). It is used as quality improver, pH regulator, chelating agent, binder and swelling agent. It’s also used to stabilize natural pigment in beans, fruit vegetable cans and bean stuffing; to emulsify fat in canned meat. For canned food and meat product, it could improve their water holding capacity and prevent fat from corrosion. Its’ significant metal ion (Calcium, Magnesium & etc) chelating activity could soften hard water and change suspension into solution. It appears alkalescence, no corrosion. It’s a kind of surface active agent for inorganic substances. It’s also a strong emulsifier of lubricant and fat.
