"Attested since 1115, the manufacture of cheese in the region continues today according to a proven traditional recipe in the village cheese dairies of its region of origin - the district of La Gruyère in the Canton of Friborg (Switzerland) - but also in the cantons of Vaud, Neuchâtel, Jura and in some Bernese municipalities.

100% artisanal know-how and a tradition passed down from generation to generation since 1115. Discussions held in Madrid (1891), Paris (1926) then Rome (1930), led to the signing of a first convention to protect the names of goods and their origin.

However, it was not until July 6, 2001 that Gruyère benefited at the national level from a controlled designation of origin (AOC), then 2011 for a protected designation of origin (PDO) for all of Europe. It is above all thanks to 100% artisanal know-how and a tradition handed down from generation to generation that Le Gruyère AOP retains its inimitable taste and impeccable quality. The production of Gruyère AOP follows a strict procedure, each step of which is followed to the letter by milk producers, cheese makers and refiners. This know-how has been sealed since 2001 by specifications, approved by the Federal Office for Agriculture."

Between 6 and 9 months old, it has a gentle, refined flavor like Gruyère AOP Classic, whereas it will be more full-bodied if aged for more than 10 months.

Le Gruyere AOP Gruyere AOP Reserve is matured for more than 10 months, giving it a more intense flavor. Full-bodied and fruity, it has a firm and slightly crumbly texture.

Le Gruyere AOP Gruyere d’Alpage AOP is made between mid-May and mid-October up on the mountain pastures. It owes its typically fine flavor to the great variety of the pasture lands and the alpine flora, as well as to the first-class unpasteurised milk from the local cows. Its flavor varies according to its age. Le Gruyère d’Alpage AOP is exclusively pressed in cloth. At the beginning of autumn, the Alpine herdsmen and their herds come back down from the mountains. This process of bringing cattle down from the mountains for winter is called the “désalpe”, and it is fittingly celebrated.
