GemPro® 4400 is a wheat protein prepared by a unique and proprietary process resulting in a product that imparts moderate elasticity and extensibility to dough systems. It improves the machinability of dough and imparts firmness to pasta products. GemPro® 4400 is particularly useful as an egg white replacer in pasta and as a protein improver in bakery products resulting in enhanced machinability, increased volume and excellent texture. Applications include whole grain baked/extruded products, biscuits, batters and breading.

GemPro® Extend Vital Wheat Gluten is isolated from hard wheat flour by natural wet-processing techniques and followed by a delicate flash-drying process. This product retains the vitality or viscoelasticity of wet gluten before the drying step. GemPro Extend® provides greater extensibility, making it ideal for sheeting products such as, pizza, flatbreads, and crackers.

GemPro® HPG is a natural, wheat protein extracted from high quality wheat flour by a unique and proprietary process to yield a 90% protein product. It has a high degree of water absorption and exhibits strong viscoelastic properties.
