The puree is prepared by cooking cranberries (200°F - 210°F for 5 minutes), prepared from the sound mature berries of the commonly cultivated cranberry plant (Genus/species Vaccinium macrocarpon). After cooking, the mixture is pumped through a sized finisher. The puree is packed in 55 gal. drums, cooled and frozen. Processing conforms to all provisions of the Food, Drug and Cosmetic Act and the Code of Federal Regulations, Title 21, Part 110, current Good Manufacturing Practices, and Part 120, Juice HACCP. This ingredient has received a heat treatment sufficient to yield a 5-log pathogen reduction.
