Optiferm GmbH Red smear is a highly complex interaction of the most diverse bacterial and yeast genera, which differ in properties such as pigmentation, aroma-forming ability, pH tolerance and mold inhibition. In the first stages of ripening, yeasts are involved in the deacidification of the cheese surface and thus create suitable conditions for the growth of the red smear bacteria. Its most typical representative is Brevibacterium linens ensures the formation of the characteristic pigmentation (orange, yellow-orange, cream-colored) and, thanks to its proteo- and lipolytic activity, contributes to the production of the typical aroma components. In the further course of maturation, the unmistakable red smear layer is completely formed.
