Cassia (Cinnamomum aromaticum, Cinnamomum Cassia), also known as Chinese cinnamon, is and comes from an evergreen tree native to southern China, Bangladesh, India and Vietnam. It is said to be a relative of cinnamon (Cinnamomum Zeylanicum), "the true cinnamon", and the dried bark is also used as a spice. Cuts are made in the bark of the branches, which once dried, roll up on their own, acquiring the silhouette of a tube or canutillo.
