Spirulina is known to be the richest source of blue pigment in the world. It consists of several bioactive components, the one which occupies a special place is the blue protein C-Phycocyanin which has broad possibilities for application in various areas of food technology. It can be extracted from different species of Cyanobacteria but, Spirulina is the culture of choice due to the high levels of C-Phycocyanin which is a highly water-soluble, internsive blue protein with strong fluorescence.
The Phycocyanin present in Spirulina belongs to the Phycobiliprotein (PBP) family and is a close chemical relative of Bilirubin -a natural antioxidant in the human body which plays a major role in preventing metabolic disorders in the system.
Phycocyanin is a naturally ocCurring protein molecule which is a biologically active nutrient compound.
