This species has a long-standing history of safe human use. As a matter of fact, it is often employed for fermenting certain foodstuffs, such as milk or meat, and producing fermented vegetables, such as kimchi and pickle. UL5 strain can produce PEDIOCIN PA-1, a class IIa bacteriocin with a broad action spectrum. The antimicrobial effect against harmful pathogens affecting the human GI-tract, such as Listeria monocytogenes and Clostridium difficile, makes this bacteriocin-producing strain the ideal candidate for targeted antimicrobial applications.
