Lactoccous Lactis species has a long history of safe human use. Indeed, we exploit its acidification and preservation features in dairy industry applications. Specifically, strain MJC18 was carefully selected among others of the same species for its ability to produce a powerful bacteriocin: NISIN Z. This bacteriocin is one of the most important antimicrobial agents obtained from natural sources. It belongs to the family of Lantibiotics and acts by destroying the cells of its antagonistic bacteria by interfering during cell wall biosynthesis.
