Originating in southern India, pepper is the most popular and most used spice in the world, representing one third of the international spice trade. It grows on a creeper that can reach a length of up to ten meters; the flowers of which form a cluster develops into berries over time. There are three types of pepper, each distinguishable by color and obtained on the basis of maturity. Green pepper is a berry that is harvested and dried before maturity; black pepper is harvested red at maturity and then dried; white pepper is obtained from a berry that is harvested following maturity, washed in water and dried to remove the outer shell and pulp. Grown as a spice crop and distilled for its essential oil, pepper is also used for piperine extraction, the key compound in its taste attributes.
