Medicinal and aromatic with many properties, particularly anti-inflammatory and anti-spasmodic, clary sage is highly valued as a plant with incredible powers. Its name comes from the Latin “salvus”, which means “healthy”; to the Romans it was “salvia salvatrix”, the plant that saves and heals. Harvested when blooming, the plant thick leaves contain most of the essential oil. Traditionally left in the field for a couple of days to reduce humidity levels – generating a “pre-wilted” quality – it can also be distilled directly, generating a different essential oil, referred to as “green shredded”. Its use has increased in France with the development and popularization of the Ambrox® molecule, synthetically derived from one of the natural compounds present in the plant, sclareol.
