Introduced into Europe earlier than other spices by Phoenician traders, it was the Arabic people who made ginger accessible in Europe during the Middle Ages before Venice took over the prolific trading of the root. Today it is mainly produced in India and China, but also in Madagascar, and it is the underground part of the plant, the rhizome, that is used for essential oil extraction. Depending on whether it is distilled after being dried or distilled fresh after being shredded, ginger essential oil is valued for a range of different applications. Extracted by means of a more technical distillation process, fresh ginger essential oil is highly concentrated in citral, which brings its lemony aroma.
