Symbolic of Provençal culture and heritage, lavender is definitively linked to the image of France. From traces of its use in Medieval medicinal gardens to its controlled origin label at the beginning of the 1980s (a first for essential oils), this perennial herb generates employment for nearly 30000 people in south-eastern France. Several species and cultivars of lavender are grown in France. These include so-called population lavenders, which grow in their natural form above a certain altitude - 600 meters - thereby maintaining the characteristic qualities of the “pays” or local area. The plants are grown from seed, resulting in heterogenous fields, both in terms of visual appearance and biochemical composition. Localized and carefully monitored since the risks of pest-related damage, these crops create a unique and prestigious essential oil, namely that of true lavender.
