Neroli owes its name to the Princess of the Ursins who was charmed by this perfumed little white flower and decided to name its essential oil Neroli in homage to the Italian city of Nerola. Bigarade, or bitter orange, is the source of an extensive family of products used in perfumery, cosmetics and flavorings, including neroli, the essential oil obtained from the fresh flowers of the emblematic tree. Similarly prized, orange blossom water, used extensively in Mediterranean cooking, is also obtained through the distillation of the flowers, which only bloom between 20 and 30 days per year, in northern Tunisia in particular. The country is the world’s leading bitter orange flower producer as it benefits from the perfect climate for this tree, which needs sun and hates the wind during the blooming season.
