Preparation: 1. Begin heating the water to 65-70ºC while mixing. 2 .Add remaining ingredients of phase A individually, while mixing slowly ensuring uniformity after each addition. Then, ingredients of phase B. 3. Continue mixing and begin cooling batch to 38-40ºC. 4 .Premix yogurt powder with water and add to main batch. Add remaining ingredients of phase C individually while mixing. Continue mixing until batch is uniform. 5. Add phase D ingredients in given order, ensuring uniformity after each addition.
