Maltitol is a sugar alcohol (polyol) in the forms of white crystalline powder or colorless neutral viscous liquid, easily soluble in water, but not in methanol or ethanol. Maltitol has moderate viscosity and boiling point. It has 85%-95% of the sweetness of sucrose but only 5% as caloric.
