Over the last decade consumers around the world have become familiar with the term “probiotics” and the general digestive and immune benefits living bacteria can provide. However, few if any consumers are familiar with tyndallized probiotics, part of the “immunobiotic” family and often referred to as “parabiotics”, “heat-treated probiotics” or “ghost probiotics”. Unlike, traditional probiotics, the tyndallization step actually kills the live bacteria making the strains more resistant to degradation by digestive juices and far more commercializable than living bacteria because they are shelf-stable and can easily be blended with other ingredients. As such, tyndallized probiotics are ideal for food and beverage applications. The inactivated (non-viable) microbial cells of the bacteria strains can offer health benefits that are similar and often superior to their live counterparts.
