Candies and Confectioneries
Traditional candies and confectioneries can be acidified at the end, which can be a formulation challenge for current titanium dioxide alternatives, such as starch or calcium carbonate (CaCO3).
Design
Both gelatin and pectin were used as a model system for stability testing at neutral pH and an acidic pH and tested against other whitening agents and TiO2.Outcomes
- Blue California’s TiO2 alternatives whiten more than TiO2 under acidic conditions, and stayed stable in both model systems, particularly at acidic conditions (see Figure 1.). As we know, CaCO3 is unstable under acidic conditions.
- In general, the Blue California whitening agents uniformly disperse in food matrices and whiten effectively, whereas other alternatives such as starches or CaCO3 settle by nature and cannot whiten effectively (See Figure 2.). Additionally, BC’s whitening agents do not settle compared to TiO2.
