Wild Chamomile is a handsome plant of 0.9 to 1.2m high, with very hairy leaves and tubular yellow flowers surrounded by white ligules. Native to West Africa, it is often confused with Tansy oil, Santolina oil or Roman and Blue Chamomile. The harvesting is done from the wild population of the central plateau in Morocco. Although the commercial name is "chamomile", the essential oil is not related to Roman or Blue Chamomile. The color of the oil is light yellow to amber-greenish yellow, while the German or Roman oils may have a blue color due to the presence of Chamazulene. Its yield is about 0.2%, and the odor is fruity-green with notes of apple and grenadine. It is a relatively unknown essential oil and there are not enough tracked records about its chemical profile or therapeutic use.

The color of the oil varies depending of the origin, but is mostly pale yellow to yellow. It has a characteristic odor: spicy, peppered and lemony. This organoleptic profile is somewhat superior in the fresh distilled oil, due to its higher aldehyde and alcohols content.

Cade is a species of juniper grown in rocky areas across the Mediterranean. Also known as juniper tar, it consist in a shrub of 3 m height, and the difference with juniper tree is that the leaves that are gathered in threes are longer and have two white strips on top. It has been used since the 19th century to relieve skin and scalp conditions such as psoriasis, eczema and dandruff, mainly in soaps and shampoos. It has been also used in flavorings for smoked products.

Also known as English Chamomile, it is an herbaceous annual plant from 25 - 30 cm high with green-gray leaves finely cut in strips. The word "chamomile" comes from the Greek chamaimelon, meaning "dwarf apple". This is due to the overripe apple aroma released by this plant. Native to Europe, Africa and Asia, the Egyptians worshiped it. This Chamomile is called "Roman" because it was identified in Rome in the 15th century. Chamomile was one of the nine sacred herbs of the Saxons. Its yellow flowers produce a light yellow liquid essential oil (with 0.2% as average yield), which sometimes has a greenish or blue color that comes from Chamazulene, a chromophore compound produced during the steam distillation process. The oil has a sweet, herbal, cognac and slightly fruity odor profile.

With the summer heat, this plant blooms a white flower with purple spots which fall a few days later, and the whole plant exudes a resin which is used to obtain several other products (mainly Labdanum oil and Labdanum resinoid). The aroma profile of this oil is really appreciated in fine perfumery, having amber, balsamic, medicinal and woody notes, and a high strength. It presents a yellow to reddish orange color. These organoleptic properties have been used since ancient times (it is reported to have been one of the ingredients of the royal perfume of Ahassuerus, the olfactory fetishist Persian emperor).

It was later introduced to England in 1562 and from the beginning of the 20th century, it was widely used in Germany for the production of several brands of vermouth.
