The flavor compounds and a part of the oil are extracted from finely chopped and freshly roasted hazelnuts by supercritical CO2 extraction and transferred in ethanol (organic). The product contains aparat from ethanol no other solvent residues, no inorganic salts, no heavy metals andno reproducible micro organisms
