Potassium lactate is the potassium salt of L(+)-lactic acid, obtained by neutralization of the acid of natural origin with a high purity potassium source. It is produced naturally by living organisms as a by-product of the glycolysis. Potassium lactate is a safe preservative with a high water holding capacity and buffering properties for food and personal care uses. As an alternative to sodium lactate, it addresses the concerns of health organizations and consumers about reducing sodium intake.
Jungbunzlauer potassium lactate is a colorless to yellowish, nearly odorless aqueous solution with a mild salty taste. This solution is stable under normal storage conditions. Potassium lactate is non-toxic to humans and the environment and is readily biodegradable.

Jungbunzlauer potassium lactate food grade is supplied in accordance with the requirements of Commission Regulation (EU) No 231/2012 and of the latest edition of the Food Chemicals Codex (FCC). Jungbunzlauer also proposes a high quality personal care grade of potassium lactate.
In Europe, potassium lactate is listed as a generally permitted food additive (E326) and may be added to all foodstuffs, following the “quantum satis“ principle, as long as no special regulation restricts the use.
The US Food and Drug Administration (FDA) affirmed potassium lactate as GRAS (generally recognized as safe) substance and permitted the use in food with no limitation other than current good manufacturing practice (CFR § 184.1639).

Jungbunzlauer potassium lactate is available as a 60 % solution for both food and personal care grades. It is supplied in bulk, in intermediate bulk containers (IBCs) with 1300 kg net weight, in drums with 270 kg net weight and in small drums with 25 kg net content.
