Mennel's Snowhite is a one-of-a-kind non-chlorinated cake flour. This specialty flour variety delivers superior volume, texture and taste compared to traditional chlorinated cake flour. Mennel's Snowhite Flour is a direct replacement for chlorinated cake flour, which is truly a necessity when making high-ratio cakes without chlorinated flour.

Mennel's Xpress pregelatinized wheat flour controls size, height and achieve more yields. It's specially processed to provide consistent viscosity and is ideal for applications that require instant thickening and binding. As a result of our unique process, you can expect these important applications and specifications from Mennel's Xpress Flour.

Mennel's Supercake Flour is a one-of-a-kind low ash bleached flour. It's one of our most-popular cake grade flours. All of Mennel's cake grade flours are milled to ensure a low protein and low ash recipe. The fluffy bleached white flour is best used for products that require multiple traits, especially a tender and soft texture. Our Supercake Flour is also strong enough to keep it's structure even after coming out of the oven.

Mennel's Majestic Flour is an essential all-purpose flour. It's milled to be versatile and is truly a must have for your baking needs. It's a special blend of our premium soft wheat flour and our mid protein hard wheat flour. Mennel's Majestic Flour has the strength to bake an exceptional bread, yet tender enough to work with other products like scones and some types of cakes.

Mennel's Snowfluff Flour is a popular straight grade flour in a chlorinated variety. This high-quality flour is milled with mellow protein soft red winter wheat ideal for products that require tender, flaky and soft textures.

Mennel's Menkota Flour is made from our premium high gluten, high protein hard red spring wheat. It's ideal for handling high absorption and is known for it's large bake volume. This spring wheat flour variety has the strength to go through intense machining. It too has good fermentation tolerance thanks to strong gluten properties.

Mennel's Menkan Flour is a mid protein hard wheat flour. It's well-known for excellent tolerance, good stability and absorption. It's milled from cleaned, sound, mid protein hard red winter wheat. Looking for flexibility and confidence? Mennel's Menkan Flour can be counted on for a wide variety of applications. This Mennel flour variety can also be used in either straight dough or sponge processes.

Mennel's Angel Food Cake Flour is a unique variety with low protein and low ash properties. Angel Food Cake Flour can be hard to come by. Mennel's special recipe has been tested and tried and won't disappoint. The fact that it's a low protein and low ash product can be chalked up to the extra step in our process. This custom Mennel process delivers a unique and very fine particle-sized bleached flour option.

Mennel's Stabilized Bran and Germ Concentrate is treated to reduce the activity of enzymes which lead to rancidity. It can be reconstituted with refined flour to create a whole wheat flour with increased shelf life. The treatment also increases whole wheat bread loaf volume and improves taste.
