Trypsin is a proteolytic enzyme purified from an extract of the pancreas of healthy bovine or porcine animals. When assayed as directed herein, it contains NLT 85 Trypsin Units/mg, calculated on the dried basis, and NLT 90.0% and NMT 110.0% of the labeled potency.
