Pilsner Malt is slightly under modified and kilned at lower temperatures than our Pale Malt. Pilsner Malt maintains more of the delicate grassy, grainy flavors that are associated with this style of malt.

Hull and Oats which is floor-malted oats utilize a variety developed in North Carolina called Brooks which is prized for its high protein levels. Hull and Oats are high in protein and contribute to the signature silky mouthfeel of both NEIPAs and classic Stouts.

Bloody Butcher Corn is classic heirloom corn that has been grown throughout the South and prized by moonshiners. Bloody Butcher Corn is packed with baking spice and pumpernickel bread notes. Bloody Butcher Corn is comparable with flaked material when mashed with standard base malt.

Sunset Wheat malt was developed using a bakery-quality wheat variety. Sunset Wheat is kept at a kilning temperature were elevated throughout to create a rich, cookie dough-like sweetness with a hint of baking spice in the finish.

Streaker Oats is produced using a proprietary variety of hulless oats licensed through NC State University. Streaker Oats are large groats that deliver a nutty, almond-like flavor along with the characteristic silky mouthfeel.

Southern Select was crafted in the spirit of the iconic English malts using a blend of three regionally-grown 2-row barley varieties.
