- KEFI’CUR ORGANIC is a curcuma fermented by a yeast-bacteria symbiosis called : KeKom SM.
- Kekom SM is a symbiotic ferment created with kefir grains and scoby kombucha, it contains lactic bacteria (Lactobacillus kefir, Lactobacillus lactis, Lactococcus sp, Leuconostocs) and acetic bacteria (Acetobacter, Gluconobacter) and yeasts (Kluyveromyces marxianus, Zygosaccharomyces kombuchaensis…).
- All these strains being GRAS (Generally Recognized as Safe). Both the symbiotic ferment and the kefir itself are defined by Standard 163: 1992 of the International Dairy Federation (IDF) as well as by Codex Stan 243-2003.
