reFRESH (cultured onion juice) from Third Wave Bioactives imparts a mild onion flavor common to perishable foods, but can also help protect them from spoilage and pathogenic bacteria. This utilitarian approach make reFRESH suitable for use in an array of food products, such as soups, dressings, sauces, meats, refrigerated meals and side dishes, etc.

bioVONTAGE® 2447 is a tan, free-flowing powder produced via the traditional fermentation of sugar with Generally Recognized as Safe (GRAS) bacteria. This process produces a complex mixture of organic acids, peptides and other fermented compounds that contribute a mild and savory flavor. Like other fermented foods, e.g. vinegar, buttermilk etc, this product may provide a desirable flavor profile in many applications and maintain the quality of the foods during shelf-life. bioVONTAGE 2447 works especially well in foods where the formulation includes a minimal amount of water or other non-oil based liquids.

Third Wave Bioactives Nisin Preparation is a tan to off-white blend of the antimicrobial polypeptide nisin (E234) and sodium chloride. Nisin peptides are produced and isolated from specific strains of Lactococcus lactis subsp. lactis under specific growth conditions and hygienic processing. The refined fermentation product is standardized with sodium chloride (NaCl) and analyzed to ensure compliance with the international nisin preparation standard as defined by the Joint Food and Agriculture / World Health Organization Expert Committee on Food Additives (JECFA) monograph.

bioVONTAGE® 7374 is a tan, free-flowing powder produced via the traditional fermentation of dextrose with Generally Recognized as Safe (GRAS) bacteria. This process produces a complex mixture of organic acids, peptides and other fermented compounds that contribute a savory, fermented and deep flavor. Like other fermented foods, e.g. vinegar, buttermilk etc, this product may provide a desirable flavor profile and help maintain the quality of the foods during shelf-life. bioVONTAGE 7374 works well in refrigerated food applications.

bioVONTAGE® 6328 is a tan, free-flowing powder produced via the traditional fermentation of sugar with Generally Recognized as Safe (GRAS) bacteria. This process produces a complex mixture of organic acids, peptides and other fermented compounds that contribute a savory, fermented flavor. Like other fermented foods (vinegar, buttermilk etc.), this product may provide a desirable flavor profile and help maintain the quality of the foods during shelf-life. bioVONTAGE 6328 works well in foods that are both heated during production, as well as ones that include no thermal processing.

This process produces a complex mixture of organic acids, peptides, and other fermented compounds that contribute a mild and savory flavor. Like other fermented foods (e.g. vinegar, buttermilk, etc.), this product may provide a desirable flavor profile in many food applications and assists in maintaining the quality of perishable foods during their expected shelf-life. reFRESH™ 386 works especially well in foods where appropriate hydration and distribution of the ingredient are easily accommodated.
