In the food industry, massoia bark CO2 extract is used to flavor food and beverages. Its sweet fragrance is reminiscent of coconut flavor. It is used for flavoring e.g. Butter, milk, and dairy products, bakeries, confectionery, candies, ice cream, popcorn, cereals, and dietary products. Massoia lactone has a pleasant odor which is described as sweet, coconutty, lactonic, creamy, and milky. A concentration of 20-50 ppm gives products already a creamy, coconut, green, and slightly fruity taste.
