Cremosa FAS Series is a frozen brown pellets with lactic acid odor. The creation of cultured dairy products, such as sour cream and buttermilk, is a time-honored tradition that has been steadily evolving over the past few centuries. The wide variety of flavors, textures, and viscosities available to consumers have opened a large market for these products. Our Cremosa collection offers a broad array of speed, texture, acidity and cultured flavor attributes that can be custom-tailored to suit your every need. Vivolac's FAS Series is composed of a blend of specific strains that allow you to create a smooth-bodied product without gas production or diacetyl flavor. This specialty line is well-suited for low and no-fat product applications, and comes complete with a strong phage-management system and the option for faster fermentation times. The FAS Series is available as frozen pellets, cans, or as freeze-dried culture. Inoculation rates for pellets are available for applications with increments of 1000, 1500, and 2000 gallons. Canned culture can be used for projects of 250, 500, or 1000 gallons while freeze-dried product can inoculate applications in increments of 50 liters or 1000 liters.
