Our Cremosa collection offers a broad array of speed, texture, acidity and cultured flavor attributes that can be custom-tailored to suit your every need. Vivolac's FAS Series is composed of a blend of specific strains that allow you to create a smooth-bodied product without gas production or diacetyl flavor. This specialty line is well-suited for low and no-fat product applications, and comes complete with a strong phage-management system and the option for faster fermentation times. The FAS Series is available as frozen pellets, cans, or as freeze-dried culture. Inoculation rates for pellets are available for applications with increments of 1000, 1500, and 2000 gallons. Canned culture can be used for projects of 250, 500, or 1000 gallons while freeze-dried product can inoculate applications in increments of 50 liters or 1000 liters.

It is available as pelletized culture, the CIT/FPC Series comes packaged in a 2000 gram pouch, allowing you to vary the inoculation rate according to your individual applications and needs.

The FSC Series is a custom-blend culture program that produces buttermilk and sour cream at consistent speeds with high diacetyl culture flavor and smooth consistency. To meet the demand for frozen yogurt with live and active cultures, Vivolac has developed the FY-7 Series. This premium line of frozen concentrated cultures is comprised of strains designed to survive freezing and assure high counts without affecting the flavor profile of the finished product This series is available as canned product with an inoculation rate of 1000 GU per 1000 gallons of frozen yogurt base.

This select group of cultures features a variety of options for cottage cheese curd manufacture and dressing shelf-life extension to suit all your product design needs. For the inoculation of overnight preparations of bulk starter media used in the production of cottage cheese curd, Vivolac offers the Kwik-Start Bulk-Set Series Designed specifically to be used with Vivolac's pre- formulated Kwik-Start and Revive medias, this culture line has multiple culture numbers to choose from, in both single- and multi-strain formats. It gives excellent curd integrity and high yields in the final product and utilizes a strong phage-management rotation system to ensure you remain efficient and on schedule. The Kwik-Start Bulk-Set Series is produced as both frozen canned and freeze-dried culture, available in many different packaging sizes to provide you with a wide range of available inoculation rates.
