The approved thickener is obtained from the endosperm through a special grinding and processing process. It is an only partially digestible compound sugar made from galactose and mannose, similar to guar gum. However, the solubility is somewhat lower at room temperature, which is why it is mostly dissolved in hot water. This heat stability is the reason for their frequent use in ready-made soups. In practice, the synergistic effects with other gums such as xanthan, carrageenan or agar are often used.
