Willy Benecke Rubber ghatti is the gum of the tree species Anogeissus Latifolia. These trees are native to the Indian subcontinent. The word "Ghati" denotes a mountain valley in the Hindi language. In other Indian languages, the term “ghat” is used to describe mountain passes that are difficult to reach. Ghatti Gummi stands for “the rubber from the mountains”.

    Harvest and refinement

    Anogeissus Latifolia grow GMO and pesticide-free in the wild and are used by humans in a variety of ways. The harvest of gum ghatti is somewhat different than with other gums: the trees separate ghatti at high temperatures and from naturally occurring wounds on the tree. The “tapping”, the cutting of the trees by the human hand, can be dispensed with during the Ghatti harvest. 

    The first steps in refining the raw material include cleaning and   sorting the rubber. In an additional step, Gummi Ghatti can be processed into powder. This powder offers a higher degree of purity and easier integration into the production process of the   industrial end user. 

    Sensory and phytochemical composition

    The raw material Gum Ghatti consists of small whitish to dark red, odorless   resin lumps. As a natural polysaccharide, Ghatti has a complex   sugar structure, the main components of which are L-arabinose, D-galactose, D-gluconic acid and D-mannose. Gum Ghatti has a very high proportion of water-soluble fiber.

    Gum Ghatti is traditionally used in India for therapeutic purposes and as a food. Due to the very high proportion of water-soluble fiber, it is taken, for example, for stomach problems. Gum Ghatti is used as a source of water-soluble fiber in the food industry. Ghatti is also used to stabilize emulsions and suspensions   in beverages, confectionery and flavors.     In the European Union, Gummi Ghatti is   not approved as a food additive and therefore does not have a European Food Safety E number. The US Food and Drug Administration (FDA) lists Gummi Ghatti as an approved food additive for emulsions under code 184.1333. In many other countries outside the European Union, the raw material is also approved for use in food.
