History
- Pecorino Romano is an Italian hard cheese that is only produced in the regions of Latium and Sardinia and the province of Grosseto. It is exclusively only made made with sheep's milk. The word Pecorino derives from the Italian word "pecora", which means sheep.
- Pecorino Romano is only produced 5 months out of the year, November through March being the milking months of the sheep.
- Domestic Romano cheese is made from cow's milk and is less salty than traditional Italian Pecorino Romano.

- rBST / rBGH Statement : All of our cheese products are guaranteed to be recombinant bovine growth hormone (also known as rBGH or rBST) free.
- GMO Statement : All products produced by Cheese Merchants of America are made without ingredients containing “GMOs”. However, since Cheese Merchants of America does not test finished products for the presence of GMOs these products cannot be labeled as or declared as “GMO Free”.
- Gluten Statement : All cheese products produced and sold by Cheese Merchants of America are naturally gluten free, as defined by the USA FDA. Cheese Merchants of America does not process products that contain gluten.
- SDS Statement : Cheese Merchants of America does not provide SDS sheets. Cheese products are not considered hazardous and do NOT require SDS sheets.

- Primary Packaging
Cheese is packed in a laminated VFFS film constructed with an oriented nylon sheet and an EVOH barrier sealant. These materials comply with the requirements of the Federal Food, Drug, and Cosmetics Act, as amended, for the packaging of food. All bags are nitrogen flushed and configured into a corrugated box.

Product may be stored/ shipped in Ambient temperature ranges from 33 to 77 degrees Fahrenheit, at less than 70% Relative Humidity. CMA is not responsible for product that is not stored/ shipped within the specified guidelines as stated above.
