Soybean Lecithin is a natural mixture of phospholipids and oil with the expressed surface activity as a result of combination of the lipophilic and hydrophilic properties in phospholipid molecule. As surfactant, soybean lecithin is an excellent emulsifier, dispersing agent, foam stabilizer, weting agent, release agent and crystallization controller.
