Earth Root Amaranth is characterized by small, often green or reddish flowers arranged in dense clusters, stems and leaves that are likewise deeply pigmented, and dry, indehiscent, one- seeded fruit. The amaranth seed is quite small 0.9 to 1.7 mm diameter. Seed colors can vary from cream to gold and pink to black. The tiny, lens shaped seeds are usually pale in color. Amaranth seeds contain exceptionally complete protein for plant sources. Besides protein, they prove to be a good source of dietary fiber and dietary minerals such as iron, magnesium, phosphorus, copper and especially manganese.

Barley has been cultivated by humans for over 10000 years. Barley seeds heads are cylindrical spikes composed of rachis each with 3 spikelets. Each spike produces 20–60 grains. Barley is used for lowering blood sugar, blood pressure, and cholesterol, and for promoting weight loss.

Millets are one of the oldest cultivated foods known to humans. The group of small millets is represented by six species, namely finger millet (Eleusine coracana (L.)), little millet (Panicum sumatrance), kodo millet (Paspalum scrobiculatum (L.)), foxtail millet (Setaria italica (L.)), barnyard millet (Echinochloa frumentacea (L.)) and proso millet (Panicum miliaceum (L.)).
