- Due to the strong gelling properties Emes EOA 30 (F 7212) can be applied as a very good binding and gelling agent for the manufacture of wine, fruit and liquorice gums as well as for the manufacture of cheese analogs such as block cheese alternatives, vegan cheese alternatives and slices. Emes EOA 30 (F 7212) can be used in a concentration of approx. 25 % in cheese alternatives and is providing excellent grating and melting properties.
