- Emwaxy® Jel 100 gives in cold water excellent clear, long, high viscous solutions with excellent storage stability and shiny appearance. As well Emwaxy® Jel 100 shows excellent homogeneous expansion providing high crispiness in snacks. Due to the rapid water absorption Emwaxy® Jel 100 has to be premixed with other ingredients as for example sugar to avoid lump formation. Emwaxy® Jel 100 is recommended to use in neutral to mild acid mediums and low to medium shear systems.

- Emwaxy® Jel 100 is applied as binding and thickening agent with very good texturing and expansion properties in many food applications. Especially in snacks Emwaxy® Jel 100 is developed to provide excellent homogeneous expansion with high crispiness and brilliant taste. In combination with Empure® KF clean label flakes Emsland Group allows customers to be in the comfortable situation to be able to manufacture clean label snacks.

Technical Details & Test Data
- Measuring method
- 15 g Emwaxy® Jel 100 are mixed with 25 ml ethanol (96 %). Then 260 ml dist. water are added whilst stirring with a glass rod; stirring time 1 minute. After 20 minutes storage at approx. 20 °C the viscosity is measured with a Brookfield, type RVT, 20 rpm.
