This spice mix is inspired by the flavors they can't get enough of in Central America. That of Creole cuisine. This cuisine is a combination of African and European cuisine and also has influences from the West Indies. The characteristic of Creole food is the mix of meat and fish in one dish and the use of a lot of herbs.
The dishes from the Creole kitchen alternate between salty and sweet flavors. In addition, it is not surprising to add fruit to savory dishes in addition to the combination of fish and meat. The kitchen symbolizes coziness. Think lazy Sundays with friends or family and comfort food.
What is the other secret of Creole cuisine besides spices? Patience. Here they seem to have invented the term slow cooking. Stews and meat that have been marinated for a long time are the basis of this cuisine. The two most famous dishes are Jambalaya (a type of paella with chicken, chorizo and shrimp) and Gumbo (stew with meat, fish and okra).
The holy trinity in this kitchen: celery, (green) bell pepper and onion. You will find these seasonings in every dish if possible. And so also in this spice mix. It is not spicy by the way, because although there are many herbs in every dish, red pepper is often served separately so that everyone can decide for themselves how hot they eat.
