Recommended Dosages

For a 5% fat formulation, the recommended dosage of MASBLEN® 2202 is 0.50%
Dosage levels will vary depending on the customers' specific requirements

Application & Functionality

Soft Serve Pasteurized liquid mixes

  • Provides good standup properties, very creamy mouthfeel with superior melt resistance to soft serve ice cream.

Procedure
  • Mix all liquid ingredients and add in powder ingredients
  • Add MASBLEN® 2201 (preblended with a portion of sugar) to the mix with agitation at around 30°C
  • Add in premelted fat at 60°C with agitation
  • Pasteurize (80-85°C/20-30s)
  • Homogenize (80°C, 200 bar)
  • Cool to < 5°C
  • Fill and Store cold
