Ruby Sweetened Dried Cranberries are produced by infusing a sucrose syrup into sliced superior grade cranberries, prepared from the sound, mature berries of the commonly cultivated cranberry plant (Genus/species - Vaccinium macrocarpon), until a specific equilibrate Brix range is reached. The product is then dried to moisture specification and lightly sprayed with oil. The process conforms to all provisions of the Food, Drug and Cosmetic Act.

The puree is prepared by cooking cranberries (200°F - 210°F for 5 minutes), prepared from the sound mature berries of the commonly cultivated cranberry plant (Genus/species Vaccinium macrocarpon). After cooking, the mixture is pumped through a sized finisher. The puree is packed in 55 gal. drums, cooled and frozen. Processing conforms to all provisions of the Food, Drug and Cosmetic Act and the Code of Federal Regulations, Title 21, Part 110, current Good Manufacturing Practices, and Part 120, Juice HACCP. This ingredient has received a heat treatment sufficient to yield a 5-log pathogen reduction.

Reduced Sugar Whole Sweetened Dried Cranberries are produced by infusing a high brix syrup into superior grade cranberries, which are then dried to moisture specification and lightly sprayed with oil. This product is an ideal alternative for low sugar snack applications.

Cranberry Juice Concentrate, Essence Returned is a concentrate prepared from depectinized, filtered juice derived from properly matured, cleaned cranberries. It is concentrated under low temperatures and vacuum, and the essence fraction is returned. This product adds typical tart flavor and intense red color to create attractive healthy juices.
