The chia plant is native to Mexico and Guatemala, where the Mayas and Aztecs used it as a medicinal plant anda staple food. Chia seed oil is extracted by gently cold-pressing the black seeds of the plant. The oil cakeproduced during this pressing process is saved and ground into fine chia seed flour. Thanks to its excellentbinding properties, chia seed flour is used to thicken sauces, soups and stews. It is also used for general cookingand baking purposes.
