Artisana Process 800/818 Series is a frozen brown liquid with lactic acid odor. The making of fine cottage cheese is an art as much as it is a science. Vivolac's carefully crafted Artisana line brings innovation and reliability to this time-honored tradition. This select group of cultures features a variety of options for cottage cheese curd manufacture and dressing shelf- life extension to suit all your product design needs. To easily and economically extend the shelf-life of your cottage cheese, choose Vivolac's Process 800 or Process 818 Series. These U.S. Patented procedures rely on adding highly-concentrated cultures the cottage cheese dressing, resulting in direct inhibition of spoilage organisms, extending the shelf-life of your products naturally without the use of preservatives with unpleasant flavors and textures. Blended with or without citrate- fermenting cultures, these lines allow you to vary the intensity of diacetyl flavor without sacrificing any of the shelf-life extending attributes. The Process 800/818 Series are produced as frozen canned culture. Typical inoculation rates are 125 GU per 125 gallons of dressing, and 500 GU per 500 gallons of dressing.
