Zhejiang Wecan Biotechnology Trehalose is a melting point of sugar containing two crystal water is 970C, the heat of fusion is 57.8KJ/mol, and the water loss is 1300. Anhydrous crystalline trehalose has a melting point of 210.5°C, a heat of fusion of 53,4KJ/mol, and an optical rotation of α20D = 1780 (20°C, 1% aqueous solution). It has good acid and heat stability, is not prone to Maillard reaction, and has low moisture absorption. Its properties are 0.45 of the sweetness of sucrose. It is easily soluble in water and hot ethanol, but insoluble in ether.
