  • Basic Recipe:
  1. Flourless Chocolate Cake Base -  252 g
  2. Whole Eggs -  151 g
  3. Heavy cream -  126 g

In a saucepan, bring heavy cream to a boil. Pour over powder base and mix until chocolate is melted. Add eggs and mix until homogenous batter is obtained. Pour into baking pan and allow to stand for 15 minutes prior to baking. Bake at 320 -340°F for 20-30minutes. Baking time will fluctuate based on thickness of cake.

  • Alternate Recipe:
  1. Flourless Chocolate Cake Base –  250 g
  2. Water –   75 g
  3. Vegetable oil –   50 g
  4. Butter –  25 g
  5. Whole eggs –  200 g

Place powder base in a mixing bowl. In a saucepan, heat the water and butter. Pour the hot liquid over the powder base and mix in a planetary mixer with whisk attachment until smooth. Add the eggs and oil. Mix to obtain a uniform, smooth batter. Pour into baking pan and allow to sit for 15 minutes. Bake at 320 -340°F for 20-30 minutes in a convection oven. (Cooking temperatures may vary with differences in oven calibration).
