More than sixty years ago, researchers determined that OVOTRANSFERRIN is an iron-binding protein, making the iron in a bacterial culture medium nutritionally unavailable to potentially harmful micro-organisms, such as Schigella dysenteria (for which iron is an essential nutrient).
