Bluebird Grain Farms Organic Split Emmer Farro is an ancient style of bulgur wheat. It is traditionally known as Farro Spezzato in Italy. Split emmer farro cooks in 1/3 the time (20 minutes) and yields a light, airy cooked grain with tremendous flavor and soft texture. It is a great substitute for bulgur wheat. Instead of being cooked and dried like traditional bulgur wheat, our split emmer farro is a raw, whole grain, minimally processed to garner its tremendous nutritional properties.

It is a slightly bitter flour with floral tones. Milled in a medium grind for granular texture and nutty crumb. It can be used just like your common “whole wheat flour” in breads.

Bluebird Grain Farms Organic Emmer Flour is naturally sweet and rich with a nutty flavor. It can be used in place of your common “whole wheat” flour for almost any recipe. This nutritionally dense flour (over 16% protein) absorbs moisture quickly; more so than other whole wheat flour. When following standard recipes you may find that you need to add more moisture (about 1/4 more) than what the recipe calls for. Emmer flour can be used as an alternative flour for some people suffering from wheat or gluten sensitivities. Some of our wheat-sensitive customers bake with it exclusively!
