Specific Functional Properties
Emwaxy® Jel 500 distinguishes itself by good viscosity and texture stability and gives in cold water high viscous and clear solution. Furthermore this starch shows good heat, shear and acid stability. Emwaxy® Jel 500 under extrusion conditions provides excellent expansion with crispy texture resulting in enjoyable mouthfeeling. Besides Emwaxy® Jel 500 has an excellent water binding capability as well as excellent freeze/thaw and storage stability with very good shelf life properties for food products. Emwaxy® Jel 500 can be used in a dosage up to 5%.

Technical Details & Test Data

Measuring method
10 g Emwaxy® Jel 500 are mixed with 20 g powdered sugar. Then 170 ml dist. water are added under stirring with a mixer; stirring time 1 minute. After 10 minutes standing at approx. 20 °C the viscosity is measured with a Brookfield viscosimeter, type HAT, 20 rpm.
