ENZECO® ACID UREASE, Urease hydrolyzes residual urea in wines to prevent the conversion of the urea and ethanol to ethyl carbamate. Used primarily in wines that are baked or otherwise exposed to heat for an extended time. It is also useful in wine when urea levels exceed 5 ppm.

ENZECO® BACTERIAL AMYLASE BL, a highly stable thermostable alpha-amylase enzyme liquid preparation derived from Bacillus licheniformis. This enzyme provides more efficient liquefaction of starch from malted barley and adjuncts, such as rice in beer production. Optimal activity occurs at 198°F.

ENZECO® BACTERIAL PROTEASE BL, a protease enzyme preparation derived from a non-GMO stain Bacillus licheniformis. It contains endopeptidase and exopeptidase, which are used for hydrolyzing proteins and for improves flavor.

ENZECO® BROMELAIN, a purified, highly active, soluble proteolytic food grade enzyme that is naturally occurring in the mature pineapple plant stems of the Bromeliaceae family. This is a powdered enzyme that is available at different activity levels and standardized to meet the application and dosage constraints.

ENZECO® FICIN 100, a natural non-GMO proteolytic biocatalyst from the latex of Ficus species (tropical fig tree), is approved for use in food and perfect for clean label products. Ficin functions similarly to other plant cysteine proteases, such as Papain and Bromelain, but has a lower deactivation temperature, making it ideal for meat tenderizing applications, particularly thin cuts of meat such as fajita strips.

ENZECO® Esterase/Lipase is a food-grade a triacylglycerol lipase produced by the controlled fermentation of a non-GMO strain of Mucor javanicus. The enzyme hydrolyzes the acylester bonds in triacylglycerols (esters of fatty acids and glycerol); yielding mono- and diglycerides, glycerol, and free fatty acids. This product preferentially releases shorter chain fatty acids.

ENZECO® Fungal Alpha Amylase is a food grade fungal alpha-amylase enzyme produced from Aspergillus oryzae that breaks down gelatinized starch to dextrins and maltose. Prolonged action results in the formation of large amounts of maltose. Fungal Amylase is not as heat stable as Bacterial Amylase, but can still be used for shelf life extension at higher dosages.

ENZECO® Purified Papain RS Concentrate is a papain that is processed without the use of sulfites. The papaya latex in this product has been processed without the addition of sodium metabisulfite. This results in papain with substantially reduced levels of SO2.This product contains only the botanical enzymes and has no other ingredients. It has earned an OMRI listed® certification, which means that it may be used in certified organic operations or food processing under the USDA National Organic Program.

ENZECO® Fungal Lactase is an acid optimum beta-D-galactoside galactohydrolase (β-galactosidase) derived from a non-GMO strain of Aspergillus oryzae. It hydrolyzes lactose resulting in glucose and galactose sugars. Generally used in dry mixes containing lactose, lactase type tablets or in capsules for nutraceutical applications. It can also be used in fermented products such as yogurt and in the production of galactooligosaccharides (GOS). It is stable at acid pH’s and higher temperatures.

ENZECO® Fungal Protease is a highly concentrated food-grade fungal proteolytic enzyme, with high levels of endo-protease and lower levels of exo-protease. It is derived from a non-GMO strain of Aspergillus oryzae and is available as a powder or microgranulate at different activity levels up to 1,000,000 HUT/g. It can be used in a wide variety of bread and baked good.

ENZECO® XYLANASE S CONCENTRATE is our highest xylanase activity product. It is a food-grade enzyme preparation from a non-GMO strain of Trichoderma longibrachiatum (formerly T. reesei), containing xylanase as its principal activity. It also contains beta-glucanase, galactomannanase, and cellulase, and has very little protease activity.

ENZECO® Glucanase PF is a purified food grade liquid derived from Penicillium funiculosum that contains a mixture of glucanases, beta glucosidase (aka cellobiase) cellulase and hemicelllase. The primary use of this enzyme is for yeast cell wall hydrolysis and is suitable for use in organic products.
